June Adventures: The Waffle Window

 



My man and I had the chance
to catch a plane to Portland last month.
We were treated to some incredible adventures by my family,
one of which was the Waffle Window.
If you haven't been, it's worth a visit.
















Belgian style waffles.
Sweet & Savory.
He ordered the Three B's: brie + bacon + basil.
I ordered the Farm Fusion: chevre + sauteed mushrooms + carmelized onions + spinach + tomatoes.

Fit Tips

Hello Friends!

I'm not one to normally talk about weight, working, out, and all that jazz,
but I've been working hard behind the scenes on getting healthy
and want to share some tips that have helped me along.

First off,
Everyone is different.
Different body,
different metabolism,
different tastes.
SUPER IMPORTANT.


As for my body, I'm 5'4" and more of an hourglass build.
I've never been a stick thin girl; I tend to have a bit more muscle and curves.
(Not complaining.)

Aaaand, I LOVE food. Big fan.

So, when I graduated from high school and ceased running,
my eating habits brought on the infamous "Freshman 15" and then some.
Since then, I've fluctuated over the years in my weight and struggled a bit with poor eating habits.
(Truth be told, I'm sort of a binger.)

About 15 months ago, I decided to rein things in, specifically in my diet.
Enter in MyFitnessPal.


It's a calorie counting app and website.
Crazy easy to use and has made a HUGE difference for me.

First off, I've never tracked my calories before.
Since I started, it's given me a greater consciousness of what I'm actually treating myself to.
Eating out of boredom was suddenly brought to light for me.
And then there's the fast food.
So many calories for something that left me feeling polluted, guilty, and unfulfilled.
True Story.

Lately, I've been using this app every single day and I LOVE it.
You can even scan barcodes with it to enter your food, sync up with other apps like Runtastic to take into account your workouts, and link with friends for support.

Second game changer for me:  ISAGENIX.



Isa-WHAT?
Yeah, that's what I thought the first time I heard of it.

The best way I can describe Isagenix is that it's a company that's produces a series of food systems focused on nutrional cleansing.
They have shakes, snack bars, chocolates, and my favorite part - the cleanse systems.

Last year, I tried a 9-Day cleanse for the first time.
It took a lot of discipline for me at first - I was eating fast food a lot prior to it and had virtually no self discipline.
The 9-Day has a structured plan to follow and was sort of a shock initially.
Aaaand, I made it harder on myself by browsing Pinterest in all its food and recipe glory late at night.
Didn't help my with my cravings those first few days...

It was worth it though and became easier over the course of 9 days.
I ended up losing 8.6 pounds and 16.75 inches.

Was I able to keep it off?
Yes.
Did I have to cleanse all the time to maintain it?
Nope.

I did eat healthier from that point on.
I also started getting more active.
Jogging here and there, walking, ballet classes.
My lifestyle was shifting.

Back in December 2012, I gave up fast food entirely.
I drink mostly water (with an occasional beer or glass of wine).
Fruits and veggies, quinoa and flaxseed, chicken and fish - these are more of the norm for me now.

Since January 10, 2012, I've lost 20 pounds.
It kind of blows me away.

What made it doable for me was making a daily effort.
A fail day here and there is fine and not worth giving up over.
Just make the general trend of your eating and activity a healthy one.
Tip: think inches, NOT pounds if you can.
And how do you feel? Well? Healthy? Try to be in tune with your body.

In my perspective, God gave me one body.
Just one.
I need to treat it like a gift.
Don't worship it or make an idol out of fitness.
Simply be a good steward of what you have.
And be realistic.

I'm now on day 2 of another Isagenix cleanse.
(I'm only doing two cleanse days rather than a 9-day system.)
My reason?
I've been breaking out with cystic acne the last few weeks and want to see if losing some toxins will help with it.
So we'll see how that goes!

I have to tell you, cleansing this time around has been so much easier.
I think it's because I have a much more disciplined approach now to eating than I did my first time.

All in all, these have been the two biggest catalysts for change in my health the last year or so.

I also run (jog/shuffle) with a Garmin.

That's my watch/gps/run tracker of greatness.
I love it because I don't have to drain my phone to track my running.
I just wear this and go.
It tells you distance, pace, calories burned, and more.
Big fan over here.
It even records your runs and records and congratulates you when you set a PR.
I love it!

Adventures in Cooking

We had some friends over the other night for dinner and boardgames,
and I had a first.

While broiling my salmon,
something amazing happened.

It lit ON FIRE.

I was standing there, in my kitchen,
getting ready to take a peek at the fish
when flames began to whip about the baking pan.

First thought: hmmmm.
Second thought: oh dear... !?!?!?!

Then, to my own surprise, I nonchalantly opened the oven door,
held the flaming pan at arm's length (with my oven mitt, of course),
and set it upon the stove.

The flames went out within seconds.
And my salmon was miraculously cooked to perfection
with only the slightest touch of crispiness on the edges
and succulent flaky meat inside.

It was like I MEANT to do it.

So there you go, guys.
I made flame-broiled salmon like a boss.*


*Disclaimer: couldn't do it again if I tried.

Pomelo?


I've been trying a lot of new foods lately.
You know, attempting to feel good 
on the outside and the inside.
One thing I recently tried was a pomelo
or a pummelo.

It's like a grapefruit, 
only sweeter, bigger, and less bitter.
I love them. 
You should try one sometime and split it with a friend.
Seriously. Do it.

Look for a giant yellow-green citrus.

Baking Away...

 

For the first time
in my life,
I baked an apple pie.

Well, 
an apple, cranberry, and walnut pie
to be exact.

I kind of winged it,
which is how I normally roll
in the kitchen.

I bought the crust though...
(I'm not that confident yet!)

Looking forward to baking some more!
Any recommendations?

I'm sad to say, my ice-cream addiction
has now extended to baked goods
in general.

Oh dear.

;)

Goods. Baked Goods.

While on our recent trip,
we made an effort to stop 
in Bishop, California.

What's in Bishop?

Well,

EVER.

Well, maybe not EVER,
but pretty dang close.

Welcome to Schat's Bakery!

When you walk in, all you can smell is bread. Glorious bread.

We bought a loaf of "Garlic Cheez" bread - great to make fancy grilled cheese sandwiches with.

While here, we split a sandwich for lunch.

A Roasted Turkey Sandwich, to be exact.


Along with bread, they sell baked treats, jams, straight up awesomeness, etc.

The place is decorated pretty neat, too! Lots of items from Holland and the like.

Good Eats

Hey Friends!

Sooo... I tried out a recipe 
I found on Pinterest
and boy oh boy...


SO GOOD.

Plus, I fried an egg for the first time.

Delicious.

Detox/Cleanse Results!

Hello my friends!

Yesterday was my final day

And here are the results...

Total Weight Lost:  
8.6 pounds

Total Inches Lost:
16.75

CRAZINESS.

Things I noticed:
1.  I have better muscle definition
2. My abdomen flattened out (WOO!)
3.  My skin has cleared up significantly
4.  I'm sleeping better (more soundly)
5.  My cravings have changed, favoring
healthy options versus processed food
6.  My clothes fit better 
(thanks to losing those inches!)

I should mention that during this cleanse,
I was not working out at a gym.
My physical activity included:
ballet class twice a week
and walking on our local track.
So, nothing crazy.

This was my first time 
trying a cleanse,
and honestly,
I was a little nervous to go for it.




9 days seemed like a long time to me
and I have the tendency to
eat out of boredom
(and for comfort)...

I knew if I were to do this, 
I'd have to truly commit, 
which (thankfully) I did.


Having ordered a kit
which provided all the food,
snacks, shakes, etc.
(excluding lunches)
that I needed for 9 
(technically 11) days
really helped me to practice
self discipline for once
with my eating habits.

So that made it MUCH easier
to complete the cleanse
than I expected!

Now,
I'm feeling great, 
eating healthier portions,
and making wiser choices
in the kitchen!

Oh! 
And my husband told me 
he can totally tell the difference
in me physically!  
Woohoo!

To maintain this new state of health,
I plan on ordering more of the 
"Isalean" shakes (which were in the kit)
and drinking those regularly.
They're pretty good! 
(Get the chocolate flavor!)
I might get a few of their other products too!

Let's Get Physical!

Me in my more active days
 
I don't know 
what it is about surfing Pinterest
that got me so motivated to 
get into shape,

but I guess all the healthy recipes
and workout ideas 
planted a seed.

Plus, a friend of mine
from high school 
started blogging about
her journey to get healthy...

So, 
I decided to try 
a detox/cleanse.

Have any of you 
ever done
one of these before?

Well,
I haven't.

My friend, Melia, tried one out
through a company called
about a month ago 
and really enjoyed it.

You order a sort of kit
that will last you 9 days 
(technically 11)
which provides you with
the shakes,
snacks, 
cleanse mix,
and 
all that jazz.

After debating the price
and whether or not
I could commit to a 9-day cleanse,
I decided to give it a shot.

So, 
here I am.

It's day 5 of 9...

and I'm feeling great.
Honestly.

No stomach pain.
No exhaustion.
No diarrhea.
(Sorry!  Just felt like 
throwing that out there!
I always thought a cleanse equated to 
LOTS of time in the bathroom... :P)

Instead, 
I am just 
plain old
feeling good.

I'm thinking about posting 
my results so far...

Chocolate Lovesauce

 
This is the chocolate cake I made 
for my husband Tanner's Birthday.
It's MY FAVORITE chocolate cake.

I first found the recipe 
reading the memoir A Homemade Life
by Molly Wizenberg...
(I highly recommend it!)

Want to give it a try???

Let's Make a Cake....

Preheat to 375 degrees

Chop up 7 oz. butter (1/2 inch cubes)

Grab 1 Tbsp unbleached all-purpose flour

Chop up 7 oz. dark (good quality) chocolate, I used Ghiradelli

Grab yo eggs, 5 to be exact

Get yourself 1 & 1/3 cup of granulated sugar

In a microwave safe bowl, combine your butter and chocolate

Microwave the butter-choco mixture (stopping & stirring every 30 seconds) until melted

Butter up an 8 inch round cake pan

Add zee sugar

Stir stir stir!

Add your eggs (mixing one at a time)

last but not least, toss in that flour and stir!

Pour that lusciousness into your pan

It's oven time!

Set a timer for about 22-25 minutes

Pull it out when the center just barely wiggles (about 25-26 minutes for me)

Let it cool (while in the pan) for 10 minutes on a rack


PLATING THE CAKE!!! 


*Disclaimer*
 Brace yourself for rambling. 

Drag a knife around the inside of the pan to loosen it up, and cover the cake with foil

Place a plate on top of the sucker (for stability)



Holding the pan and plate, 
with the cake sort of sandwiched in between,
invert the cake onto the foil covered plate

As you can see in the photo,
some of my cake stuck, but no worries, 
I just scooped the goodness
and plopped it back where it belonged...

(P.S. - you can solve this problem
by using buttered parchment paper 
in the bottom of the pan,
but I'm lazy...)

Notice the bottom is up?
Now grab your fancy serving platter or plate
and place it over the cake's bottom.

Using the same move with the foiled plate
and your platter,
invert the cake again.

It should now be face up on your new plate!


Ta-DA!


One of the reasons I love this cake
is the crispy flakey texture it has.

Inside, the cake melts in your mouth...
Rich, chocolatey awesomeness.


Here's a tip. 
Freeze the cake for a while 
to give it a more solid, creamy texture.

Also, you can decorate it with powdered sugar
or fresh strawberries...

Whatever you like.
I normally eat it plain.
Because it's THAT GOOD.
